Sailing

Hey friend! here is an update :D

We've been sailing since last monday! Tuesday we made it to Bornholm for the night, beautiful Island, the weather unfortunately had us sail further on immediately Wednesday morning but maybe on the way back I get to explore it a bit more!
Wednesday we made it to Sweden (Simrishamn) already and then went on to spend a few days on the lovely amazing Island Hanö... Let me tell ya, what. a. dream. There were hardly any people (yet, sure is different during summer season) and a tiny Island= complete nature. It was one of the most beautiful little places I have been to in a very long time! The weather got us to Karlskrona where we are lying now for a few days and waiting for this storm to pass.
After a week I have embraced the holiday life I must say! Lots of sleep, lots of food and lots of reading!!! 
I hope you are enjoying yourself wherever you are 'cause this sure is a wonderful world!!!

A serious word.

Dear crazycoldstormyrandom Weather,

We have plenty of fun things to do on the boat and in this cute little city. However, it would be nice if you could leave now and let the sun come out to play so we can be on our way to Bornholm!

Sanity through F O O D


I can't wait to set sails, I am a dreamer and adventure seeker after all! But I'm also a creature of habit. The big conundrum I often face, is, how to get both? 
After some thoughts (and lets get honest, some worries) of how I will keep sane surrounded by my parents, living in a tiny room with my husband with barely enough space to stand upright and giving up manicured nails (I know, first world problems). I came up with this solution: I shall bring my favorite habits into my adventures! What a schmarty I can be.

But for realz, as long as I eat my nutritious meals and exercise whenever I can, I stay alert and happy ---> I dive into adventure without hesitation and the small room doesn't (let's hope) seem so tiny and my parents... Well, parents be parents :D

For those of you who know me well, know that Food is very dear to my heart. If I eat every 3-4 hours I am a real nice girl that can laugh a lot. If, however, there is no food around, I am hungry and you are saying something that might be misinterpreted, which in a situation like this is mostly the case, I miiiiight lose my temper just a little bit. Unfortunately. I. Am. One. Of. Those. 
There. I said it. 

But hey, at least I know that lack of food makes me cranky and so to outsmart (yes schmarty once again) myself (is that even possible) I (just wanted to write another thing in parenthesis). Lets start over... To not be cranky and no fun, I do a little planning ahead, I have food on me or close to me at all times... I am in constant search for fun healthy snacks that I can make in a big batch and keep in the fridge and grab to go... 

I made this recipe the other day. I recommend it! It's really tasty and only took 10 minutes to throw together. If you are like me and get grumpy when hunger strikes then I say 'Make these! They will make you happy!'


So here is to a full belly, a powered-out body and a zen-like state of mind at all time!




Quick fix Muffins  
(Great recipe from greenkitchenstories.com)
Makes 12-15 Muffins
Dry ingredients
100 g / 1 cup walnuts
85 g /1 cup rolled oats, use gluten free if intolerant
90 g / 2/3 cup buckwheat flour + 2 tbsp arrowroot (or potato starch) (I used whole wheat flour)
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tbsp turmeric (use a little less if you are not used to the flavor)
1 tsp freshly ground cardamom (I left this out)
½ tsp sea salt
a pinch black pepper
Wet ingredients
160 ml / 2/3 cup buttermilk or plant yogurt
80 ml / 1/3 cup olive oil or butter (I used sunflower oil)

2 ripe bananas, mashed

5 fresh dates, mashed (I used 4 tbsp Maple Syrup)
3 large eggs
(the eggs can be replaced with chiaseeds or flaxseeds; the ratio 1 tbsp chia/flax seeds + 3 tbsp water= 1 egg)
A large handful blueberries, frozen or fresh
Granola topping
1/3 cup rolled oats
2 tbsp olive oil/coconut oil

1 tbsp runny honey
(I used regular organic mixed Müsli with no added sugar on top, including the dried fruit)
Preheat the oven to 400°F / 200°C. Line a muffin pan with paper liners or grease the pan with oil or butter. Add walnuts and rolled oats to a food processor or blender (or mortle) and mix quickly into a coarse flour. Transfer to a large mixing bowl together with the rest of the dry ingredients. Add buttermilk, oil, bananas and dates to the food processor or blender and mix until smooth, then transfer to the mixing bowl with the dry ingredients. Crack the eggs in a separate bowl and beat them for about a minute before adding them as well. Use a spatula to carefully fold everything until combined. Divide the batter into the muffin tins, drop a bunch of blueberries on top of each muffin and gently push them down a bit. Mix together the granola crumble in a small bowl and add it on top of the muffins. Bake for about 18-20 minutes. Best enjoyed still warm from the oven.
